Caramel, Vanilla, & Scotch Ice Cream

Light and creamy- no machine required!


Food52's recipe for No-Churn Ice Cream With Vanilla Bean & Scotch is SUPER simple; seriously, it took me maybe 7 minutes to prepare. If you don't have vanilla beans, just use 3 tsp of vanilla extract instead. All you have to do is whip the ingredients together to a soft peak, put the mixture in an airtight container, and freeze for 3-4 hours. Before you know it, you got a light and airy ice cream!


If you're worried about the booze...

The scotch is not meant to make this boozy, rather lend a deep caramel flavor to the ice cream's predominantly vanilla flavor profile. I mixed Ghirardelli caramel sauce into the base to further highlight the Scotch's caramel notes. I also served this with the caramel sauce and some of my Not-So-Sweet Granola for added texture. Needless to say, this batch did not last through the day... it's that good.
