Gluten-Free Spice Loaf & Candied Nuts

A perfectly sweet treat that you won't even realize is gluten-free!


 

Gluten-Free Spice Loaf & Candied Nuts

Gluten-Free; Dairy-Free

Makes 1 loaf

Ingredients

The loaf

  • 16 oz 1-to-1 gluten-free flour blend

  • 1/2 c coconut sugar

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 3/4 tsp kosher salt

  • 1 tsp cinnamon

  • 1/2 tsp allspice

  • 1/4 tsp ginger

  • 1/4 tsp nutmeg

  • 1/4 c vegan butter, melted

  • 1/3 c vanilla almond milk

  • 2 eggs

  • 2 tbsp maple syrup

The maple glaze

  • 1/2 c maple syrup

  • Water

The candied nuts

  • 2 tbsp vegan butter

  • 1 heaping c pecans

  • 1 heaping c almonds

  • 1/2 c brown sugar

  • 1 tsp cinnamon

  • 1/2 tsp allspice

  • 5 tbsp vanilla almond milk

  • 1 tsp kosher salt

Directions

  1. Preheat the oven to 350 °F and lightly grease a pullman loaf pan.

  2. Add the gluten-free flour, coconut sugar, baking powder, baking soda, salt, and spices to a medium bowl and whisk to combine.

  3. In a separate small bowl, whisk together the rest of the loaf ingredients.

  4. Add the wet to dry ingredients and fold together until just combined. Then, use your hands to gently kneed the dough until you achieve a smooth ball.

  5. Press the dough down into the pan, add the pullman loaf pan cover, and bake for 27-30 minutes or until a toothpick comes out clean from the center.

  6. For the glaze, add the maple syrup to a bowl and add small amount of hot (just boiled) water to thin it out. The glaze should be thick enough to coat the back of a spoon (start with 1/2 tbsp water).

  7. For the candied nuts, melt the vegan butter in a pan over medium heat.

  8. Then, add the nuts, coating them in the vegan butter.

  9. Add the brown sugar and stir until fully melted.

  10. Then, add the cinnamon, allspice, almond milk, and salt, stirring frequently to prevent the sugar from burning. Cook until the milk is fully evaporated.

  11. Allow to the loaf to cool for at least 10-15 minutes before slicing. Serve with a drizzling of maple glaze and generous amount of candied nuts.
