Microwave Cinnamon Rolls for One

A quick way to some cinnamony deliciousness.

Microwave Cinnamon Rolls for One
Vegan, Gluten-Free, Nut-Free
Serves 1
Ingredients
Dough
1/2 c gluten-free AP flour
1/4 tsp baking powder
pinch of kosher salt
1/4 c applesauce
1 tbsp maple syrup
1/2 tsp vanilla extract
Filling
1 tbsp maple syrup
lots of cinnamon!
Directions
Whisk together the GF AP flour, baking powder, and salt.
In a separate bowl, combine the applesauce, 1 tbsp of maple syrup, and vanilla extract.
Add the wet to dry ingredients and gently knead until you form a smooth ball of dough.
Thinly roll out the dough into a long rectangle.
Spread the maple syrup and generously sprinkle cinnamon on top.
Slice in half to form two long rectangles. Roll each rectangle into a bun and place both in a greased mug.
Microwave for 60 to 75 seconds and enjoy!
