When you thought banana bread couldn't get any better...

Coffee Cake Banana Bread
Egg-Free, Vegetarian
Ingredients
Batter
1/2 c softened butter
1/3 c sugar
1/3 c honey
2/3 c applesauce
3 mashed bananas
1 3/4 c AP flour
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp sea salt
Cinnamon Sugar
1.5 c brown sugar
2 tsp cinnamon
1/2 tsp nutmeg
Directions
Preheat oven to 350 °F and lightly grease a standard loaf pan.
Cream the butter and sugar together.
Whisk in the honey and applesauce until evenly combined.
Using a spatula, fold in the mashed bananas.
Add the flour, baking soda, cinnamon, nutmeg, and salt, folding it into the wet batter until just combined.
Divide the batter in half. Add 3-4 tbsp of the cinnamon sugar to one half of the batter.
Using half of the regular and half of the cinnamon sugar batter, alternate between adding spoonfuls of each into the loaf pan.
Add an even layer of the cinnamon sugar to cover the entire surface of the batter.
Repeat Step 7 on top of the cinnamon sugar layer until all the batter is used.
With a toothpick or knife, swirl through the batter laterally back and forth across the pan. Do not over-swirl; light swirling is how you get the cinnamon swirl in your loaf!
Top the loaf with another even layer of the cinnamon sugar.
Bake for about 60 minutes or until a toothpick comes out clean from the center of the loaf. Be sure to check on the loaf during its bake to ensure the sugar isn't burning! I don't think it will, but if you're concerned about it, you may loosely cover the loaf with tin foil after 35-40 minutes.
Notes
*You will have a lot of leftover cinnamon sugar; store it to add some deliciousness to other foods and bakes, like oatmeal, challah, or even as a sweetener in coffee!
