Mini Fruit Galettes

Sally's Baking Addiction is one of my favorite baking blogs- her recipes are not only delicious but easy to follow and have always turned out beautifully for me. When I learnt about her monthly baking challenges, I knew that I had to try it out!
The Process

I made Sally's All Butter Pie Crust for this recipe. I used to be intimidated by the idea of making your own pie dough; everyone makes it out to be super difficult, but it is really not difficult at all to do! If I'm baking, I like to make as many elements of a recipe from scratch (because that's how you develop your baking skills and makes baking adventurous and fun!), so I didn't even consider using store-bought pie dough, but if you're in a pinch or don't want to
make the dough yourself, that will definitely work with this recipe. (I do think it's worth making it yourself though- the flavor and texture they add to the final galettes
will be soooo worth it!)

For the fruit filling, I used what I had on hand- strawberries, blueberries, and pomegranate seeds. Sally's recipe uses strawberries and blackberries, but she writes that any fruit will do! I marinated the fruit with lemon juice because I felt that would work better with the berries and pomegranate seeds than vanilla extract, but you can do whatever you feel pairs with your fruit best.
Next was the rolling out, filling, and shaping of the dough to form the mini galettes. After shaped, I brushed the circumference of the galettes with milk and topped them with a course sugar (I regular sugar because I don't have course sugar) and sliced almonds. All that was left to do was chill them in the fridge for at least 20 minutes before baking.
Do not ignore the chilling steps; they are crucial for your galettes to hold their shape!

These turned out PHENOMENALLY and my family loved them. The crusts were buttery and flakey, and the fruit added aesthetic and flavorful vibrancy to these little guys. You can top them with whipped cream, vanilla ice cream, or greek yogurt (which is what I did). I definitely recommend trying them out! They are not super difficult to make, and just a little bit of extra effort and time produces a perfect homemade springtime treat!
