Rainbow Biscotti

Add some color and crunch to your morning coffee.


This recipe is a little more involved than your typical cookie recipe, but the results are beautiful and definitely work the little bit of extra effort! For this post, I am only going to describe how to make biscotti "rainbow," meaning you may apply this to your favorite biscotti recipe. I used King Arthur Flour's American-Style Vanilla Biscotti recipe, and it turned out DELICIOUS (though as long as you use any standard vanilla biscotti recipe, yours will turn out the same!).


The Process

  1. Using any standard vanilla biscotti recipe, make the dough as instructed.

  2. Divide the dough into 5 equal portions. Evenly dye each one a different color using the liquid or gel food coloring of your choice.

  3. Lay a large piece of plastic wrap on your countertop. Add the colored dough in even lines adjacent to each other (lengthwise).

  4. Using the plastic wrap, fold over the divisions of dough to form a long. Use your hand to roll the plastic-covered dough log until it becomes as long as intended for your biscotti logs. Rolling is key to combining the colored portions of together without blending the colors- do not overdo it, or your colors might get muddied.

  5. Once your log is rolled out to the desired length and width, continue baking as instructed in your recipe.
