Rainbow Cereal Quick Sticky Buns

Breakfast for dessert or dessert for breakfast?


What makes these guys "quick?" No yeast or proving required! You can also customize these by using any cereal you like. I recommend using Froot Loops (as I did) or Fruity Pebbles, but feel free to use your favorite cereal. Best enjoyed warm :)


 


Rainbow Cereal Quick Sticky Buns

Makes about 5 buns



Ingredients

Dough

  • 1/2 c Greek yogurt

  • 1/2 c AP flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • ~1/4 c pulverized cereal of choice

White Chocolate Ganache

  • ~1/3 c white chocolate chips

  • 2-4 tbsp heavy cream

Glaze/Toppings

  • 1/2 c powdered sugar

  • 1 tbsp milk

  • 1/2 tsp vanilla extract

  • 1/2 tsp melted butter

  • Partially crushed cereal to top


Directions

  1. Preheat oven to 375 °F and lightly grease a muffin tin.

  2. Combine all of the dough ingredients and knead until smooth and combined.

  3. Roll out the dough into a thin rectangle, about 1/4 inch thick.

  4. Microwave the white chocolate chips in intervals of 30 seconds until melted. Whisk in heavy cream a tbsp at a time until you achieve a thick, spreadable consistency.

  5. Spread the ganache in an even layer on top of the dough, leaving a small perimeter of dough uncovered.

  6. Roll the dough into a tight log and seal shut. Optionally roll in additional pulverized cereal.

  7. Cut the dough into 5 even pieces and place each roll in a space of the muffin tin.

  8. Bake for about 22 minutes or until golden.

  9. While the buns are baking, combine the ingredients for the glaze until smooth.

  10. Generously top the buns with glaze and semi-crushed cereal immediately after removing them from the oven.

  11. Let cool for about 5 minutes before removing from the tin.
