Secret Chewy Brownies

Deceptively cakey, explicitly chocolatey!

These guys will not disappoint! The coconut milk does not add a coconut flavor; rather, it adds a deeper richness and moisture that helps make these thick brownies super chewy! The recipe can makes 9, 12, or 16 brownies, depending on how hungry y'all are (or if you somehow don't want to keep these all to yourself 😉)

 


Secret Chewy Brownies

Serves 9 Hungry People :)


Ingredients

  • 1 c chopped dark chocolate (or chips), divided

  • 1/4 c coconut milk (cream and milk)

  • 1/2 c butter, melted

  • 1 c white sugar

  • 1/2 c brown sugar

  • 1 tsp vanilla extract

  • 2 large eggs

  • 1 cup all purpose flour

  • 1/4 c cocoa powder

  • 1/2 tbsp baking soda

  • 1 tsp espresso powder

  • 1/2 tsp sea salt


Directions

  1. Preheat your oven to 350 °F and coat an 8x8 pan with nonstick spray.

  2. In a microwave-safe bowl, melt 1/2 c of the chocolate with the coconut milk in 30 second intervals, until just melted. Then, whisk to completely melt the two together.

  3. In a medium bowl, whisk together the melted butter and white and brown sugar until smooth.

  4. Add the chocolate-coconut mixture and vanilla extract to the bowl followed by the eggs (one at a time) and whisk to combine.

  5. In a separate bowl, whisk together the flour, cocoa powder, baking soda, espresso powder, and sea salt.

  6. Create a well in the center of the dry ingredients, pour in your wet ingredients, and fold in with a spatula until just combine.

  7. Add the remaining 1/2 c of dark chocolate, again folding in until just combined.

  8. Pour your batter into the 8x8 pan, gently tapping it on the counter to make sure it's spread evenly. Optionally sprinkle with even more chocolate!

  9. Bake for 40-50 minutes or until a toothpick comes out clean from the center of a muffin. Allow the brownies to cool for about 10 minutes before enjoying!
