Rainbow Oreo Cheesecake Bars

Create your own (delicious) rainbow!

These bars are a super fun way to get your cheesecake fix! There are a couple variations you may do depending on what you have available at home. Make these for birthdays, in honor of pride month, or just to have some fun snacks around :)
Rainbow Tie-Dye Cheesecake Bars
Adapted from a recipe by Inside BruCrew Life
Ingredients
2 sheets of Oreos* (about 28 cookies)
2 tbsp butter, melted
24 oz. cream cheese
1.5 c white granulated sugar
1/4 c sour cream
3 tbsp AP flour
1.5 tsp vanilla extract
3 room temperature eggs
food coloring of choice
Optional: gold glitter sprinkles
Directions
Preheat oven to 325 °F.
Coat a 9 X 13 baking pan with nonstick spray and line the bottom of it with parchment paper. The parchment paper will help you get your bars out in one piece after baking, but nonstick spray alone should be enough if you do not have parchment paper on hand.
Pulverize the Oreos in a food processor until they become fine crumbs. Combine with the melted butter and press down to form a flat and even layer on the bottom of your pan.
Use a hand or stand mixer to combine the cream cheese and sugar until light and creamy.
Add in the sour cream, flour, and vanilla until combined.
Mix in the eggs, one at a time, until you achieve a light, smooth consistency.
Add 1/2 of the batter to the pan and divide the rest into 5 small bowls (or into the number of bowls that corresponds with how ever many colors you want in your bars).
Color the divided batter as desired (I made mine pink, purple, blue, green, and peach).
Randomly disperse the colored batter in the pan. Use a toothpick to swirl the colors together. Do not over-swirl or your colors will be muddied! Optionally top with gold glitter sprinkles. (Star sprinkles or any shimmery sprinkles would be super cute here too if you have them!)
Baked for 40-45 minutes, then let cool at room temperature for 2 hours. Then chill in fridge for 4-6 hours (until fully cooled).
Cut into bars and enjoy! Store in an airtight container in the fridge for up to 3 days or in the freezer (preferably cut) for about 3 months.
Notes
*You can use any sandwich cookies you like here if you want to change these up a bit! I recommend vanilla Oreos if you want a lighter base for your bars.
