These falafels are not only a great way to add some Mediterranean spice to your meals but also pack tons of vegan, gluten-free protein and fiber!

This recipe is by Eating Bird Food and makes for about 15 falafels. Falafel is super freezer-friendly and a great vegan protein option for meal prep. They're also great in salads and grain bowls, dipped in hummus and tahini, or eaten the traditional way- in a pita with ALL the works 😋

I've been to Israel a couple of times and have eaten authentic falafel- crispy, fried balls of fresh herbs and chickpeas in a pita or laffa with hummus, tahini, Israeli salad, and pickles. Middle-Eastern flavors are super different from American ones, so if you've never had falafel before, definitely try these out!! I'll be honest- these are not like true Israeli falafel; nothing can compare to the real deal! That being said, this recipe is an easy way to get some of that falafel experience without dealing with frying (or flying!) and is still super tasty!
