Chai Chocolate Chip Cookie Dough Bites | Homemade Chai Spice

High in protein, high in flavor.


Chai is one of my favorite spice mixes- earthy and warm with a bit of a kick. While it is July, there's no harm in adding some of this Fall flavor to your life!


Homemade Chai Spice Ratio

1 cardamom : 1.25 nutmeg : 1.25 ground cloves : 2.5 cinnamon : 3 ground ginger


I use tsp as a measurement for the spice mix, but you can also use tbsp depending on how much you want to make. Also, you can play around with the ratio depending on your taste! Some people may not want such a strong ginger flavor, in which case I recommend using more cinnamon instead.


 


Chai Chocolate Chip Cookie Dough Bites

Vegan, Gluten-Free



Ingredients

  • 1 can low- or no-sodium chickpeas, thoroughly rinsed*

  • 1/4 c almond butter

  • 1/4 c maple syrup

  • 2 tbsp coconut sugar

  • 1 tsp pure vanilla extract

  • 1.5 tsp chai spice (DIY version above)

  • Sea salt to taste

  • 1 c oat flour (verified GF)

  • 1/2 - 2/3 c dark chocolate chips


Directions

  1. Add the chickpeas, almond butter, maple syrup, coconut sugar, vanilla, chai spice, and salt to a food processor and pulse until smooth. You do not want any chunks of chickpeas in your cookie dough bites!

  2. Fold in the oat flour until evenly combined. Then fold in the dark chocolate chips. The dough should be malleable but not feel super sticky; add a bit more oat flour if it does.

  3. Use a tbsp to portion out pieces of dough and roll between your palms to form balls.


Notes

*Really rinse the chickpeas well; you want to rinse until there are no more bubbles and the aquafaba is completely gone.
