Chocolate Chip Banana Bread Donuts with Chocolate Frosting

Chocolate Chip Banana Bread Donuts with Chocolate Frosting

Dairy-Free; Nut-Free

Makes 10-12 donuts

Ingredients

The donuts

  • 2 large bananas, mashed

  • 1/4 c evo

  • 3 tbsp unsweetened soy milk

  • 5 tbsp honey

  • 3/4 tsp vanilla extract

  • 1 3/4 c AP flour

  • 5 tbsp white granulated sugar

  • 1 tsp baking soda

  • 1/2 tsp cinnamon

  • 1/2 tsp cardamom

  • 1/4 tsp sea salt

  • 3.5 oz dark chocolate bar,* chopped

Chocolate frosting

  • 1/2 c unsweetened cocoa powder

  • 1/3 c powdered sugar

  • 1/2 tsp vanilla

  • 6 tbsp unsweetened soy milk

Directions

  1. Preheat the oven to 350 °F and lightly grease 2 donut pans (assuming each makes 6 donuts).

  2. Add the bananas, evo, soy milk, honey, and vanilla extract to a bowl and whisk to combine.

  3. In a separate bowl, whisk together the rest of the donut ingredients (except for the dark chocolate).

  4. Add the wet to dry ingredients and fold together until just combined (do not over-mix to avoid getting a tough donut!)

  5. Fold in the chopped dark chocolate until evenly incorporated in the mixture.

  6. Evenly distribute the donut batter across the donut pans (I like to add the batter to a plastic baggie and cutting a corner to pipe it into each mold); you should achieve 10-12 donuts.

  7. Bake for about 12 minutes or until a toothpick inserted in the center comes out clean.

  8. To make the chocolate frosting, combine all of the frosting ingredients in a small, shallow bowl until smooth.

  9. Allow to the donuts cool fully before tipping each in the chocolate frosting and the frosting to slightly harden before enjoying!


Notes:

*Make sure the chocolate bar is certified dairy- and nut-free before using if that concerns you!
