Chocolate Chip Banana Bread Donuts with Chocolate Frosting
Dairy-Free; Nut-Free
Makes 10-12 donuts
Ingredients
The donuts
2 large bananas, mashed
1/4 c evo
3 tbsp unsweetened soy milk
5 tbsp honey
3/4 tsp vanilla extract
1 3/4 c AP flour
5 tbsp white granulated sugar
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp cardamom
1/4 tsp sea salt
3.5 oz dark chocolate bar,* chopped
Chocolate frosting
1/2 c unsweetened cocoa powder
1/3 c powdered sugar
1/2 tsp vanilla
6 tbsp unsweetened soy milk
Directions
Preheat the oven to 350 °F and lightly grease 2 donut pans (assuming each makes 6 donuts).
Add the bananas, evo, soy milk, honey, and vanilla extract to a bowl and whisk to combine.
In a separate bowl, whisk together the rest of the donut ingredients (except for the dark chocolate).
Add the wet to dry ingredients and fold together until just combined (do not over-mix to avoid getting a tough donut!)
Fold in the chopped dark chocolate until evenly incorporated in the mixture.
Evenly distribute the donut batter across the donut pans (I like to add the batter to a plastic baggie and cutting a corner to pipe it into each mold); you should achieve 10-12 donuts.
Bake for about 12 minutes or until a toothpick inserted in the center comes out clean.
To make the chocolate frosting, combine all of the frosting ingredients in a small, shallow bowl until smooth.
Allow to the donuts cool fully before tipping each in the chocolate frosting and the frosting to slightly harden before enjoying!

*Make sure the chocolate bar is certified dairy- and nut-free before using if that concerns you!
