Leftover Pie Crust? Make These Cookies!

Don't waste leftover pie or tart dough; make delicious cinnamon roll cookies instead!

After baking the mini fruit galettes, I found myself with some leftover dough that I really didn't want to waste. So, I did a bit of recipe research and found one for these pie crust cookies by The Spruce Eats! They're basically flaky cinnamon roll cookies, and who doesn't love a good cinnamon roll?!
The Process
The recipe is pretty straight forward: roll the dough out thinly, spread with melted butter, *generously* cover with cinnamon sugar, roll into a log, cut into 1-inch pieces, and bake! The only additional step I added was chilling the log before slicing and the sliced cookies before baking. The high butter content of pie crust makes it very pliable at room temp, so it will lose its shape in the oven if not chilled. Also, be sure to really let the cookies fully cool before icing! You want the icing to stay white and thick, and icing warm cookies will cause it to melt and thin out. You can also add a little vanilla extract to the icing to give it some extra flavor.
The cookies will spread irregularly; do not worry, that's normal. Remember, you're working with pie crust here! The recipe states to bake these at 350 °F for 15-20 minutes; I baked mine for 20, and they still weren't super golden brown, but I noticed that they developed a nice, soft golden crust as they cooled down. These will definitely be a go-to recipe for when I have leftover pie or tart crust!
