Mini Apple Crisps for Two

Mini Apple Crisps for Two

Vegan; Gluten-Free

Serves 2

Ingredients

The Apples

  • 1 gala or honey crisp apple, cubed (peeling optional!)

  • Juice of 1/2 a lemon

  • 2 tbsp water

  • 1/2 tbsp maple syrup

  • 1/2 tsp cinnamon

  • a pinch salt

The Crisp

  • 1/3 c rolled oats

  • 2 tbsp chopped pecans

  • 1/4 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/8 tsp cloves

  • a pinch salt

  • 2 tsp melted refined coconut oil

  • 1/2 tbsp maple syrup

Directions

  1. Preheat the oven to 375 °F.

  2. Combine all of the ingredients for the apple component in a bowl, making sure all the pieces of apple are evenly coated in the mixture.

  3. In a separate bowl, combine the oats, chopped pecans, and spices.

  4. Add in the coconut oil and maple syrup and mix until the oats are evenly coated and a bit sticky.

  5. Evenly divide the apple mixture (including the leftover liquid!) into two mini tart pans, afterwards splitting the crisp mixture evenly on top of the two.

  6. Bake* for 15 to 20 minutes*, or until the apples are fork tender.

  7. Enjoy warm with a dollop of vanilla ice cream or yogurt to top!


Notes:

*Begin checking on the crisps after 10 minutes of baking to ensure the oats/nuts don't burn; if they look like they might begin to burn but the apples are not ready, loosely cover the tarts with tinfoil for the remainder of the baking time.
