Pumpkin Chocolate Chip Oatmeal Cookies

Vegan, Gluten-Free

Makes 8 Cookies


Ingredients

  • 3/4 c old fashioned oats

  • 3 tbsp almond flour

  • 1/4 tsp salt

  • 1/2 tsp cinnamon

  • 1/8 tsp cardamom

  • 1/8 tsp cloves

  • 1/8 tsp nutmeg

  • 1/4 tsp baking soda

  • 1 tsp pure vanilla extract

  • 1/2 c pumpkin purĆ©e

  • 1/4 c maple syrup

  • 1/4 c almond butter

  • 2 tbsp pumpkin seeds

  • 2 tbsp dark chocolate chips


Directions

  1. Preheat oven to 350 °F.

  2. Combine the oats, almond flour, salt, cinnamon, cardamom, cloves, nutmeg, and baking soda in a small bowl. Then add the vanilla, pumpkin, maple syrup, and almond butter and combine until you get your cookie dough.

  3. Fold in the pumpkin seeds and dark chocolate chips. Using about 1.5 tbsp of cookie dough per cookie, form the dough into 8 round cookies. These won't spread, so make sure to flatten it out to the size and thickness you're looking for.

  4. Bake for 15 minutes and let cool for at least 10 minutes before eating.
