Roasted Red Pepper Pesto
Vegan, Gluten-Free
Ingredients
1 tsp minced garlic
2 roasted red bell peppers
4 red cherry tomatoes
1/4 c pine nuts
1 c fresh basil (packed)
Juice of 1/2 a lemon
1/2 c olive oil*
1/2 tsp paprika
1/8-1/4 tsp cayenne pepper (optional)
salt and pepper to taste
Directions
Blend all ingredients together until you achieve your desired consistency.
Notes
*You may want to use more or less olive oil, depending on how thick or thin you like your pesto.
