Roasted Red Pepper Pesto

Vegan, Gluten-Free



Ingredients

  • 1 tsp minced garlic

  • 2 roasted red bell peppers

  • 4 red cherry tomatoes

  • 1/4 c pine nuts

  • 1 c fresh basil (packed)

  • Juice of 1/2 a lemon

  • 1/2 c olive oil*

  • 1/2 tsp paprika

  • 1/8-1/4 tsp cayenne pepper (optional)

  • salt and pepper to taste

Directions

  1. Blend all ingredients together until you achieve your desired consistency.


Notes

*You may want to use more or less olive oil, depending on how thick or thin you like your pesto.
