Spiced Apple Jam-Stuffed Honey Cookies

Spiced Apple Jam-Stuffed Honey Cookies
Gluten-Free
Makes: ~20 cookies
Ingredients
Spiced Apple Jam
2 medium sized gala apples, peeled and diced
6-8 tbsp water
Juice of ½ lemon
3 tbsp honey
2 dates, softened and chopped)
½ tsp vanilla extract
½ tsp cinnamon
¼ tsp nutmeg
⅛ tsp cloves
Pinch of salt
The Cookies
4 c almond flour
3 tsp baking soda
1.5 tsp salt
1.5 tsp cinnamon
1/2 tsp nutmeg
1/2 c honey
2 eggs
2 tsp pure vanilla extract
6 tbsp refined coconut oil, melted

Directions
Preheat the oven to 350 °F.
To make the spiced apple jam, add all the jam ingredients to a medium saucepan over medium-high heat, stirring every couple of minutes until the liquids have completely reduced and the apples have softened. You should be able to easily put a fork through a piece of apple, and the apples should be aromatic and covered in a thick, sticky glaze.
Transfer the mixture to a food processor and pulse until you achieve a coarsely chopped jam-like consistency. Jar the mixture and place it in the fridge to cool completely.
Meanwhile, whisk together the almond flour, baking soda, salt, cinnamon, and nutmeg.
In a separate bowl, combine the honey, eggs, vanilla, and melted coconut oil.
Add the wet ingredients to the dry and mix until evenly combined.
Take a spoonful of cookie dough into your hands and press it into a flat disk (it’s normal for the mixture to be kind of sticky- I recommend covering your hands with oil to make it easier to work with).
Add a small spoonful (probably 1-2 tsp) of the cooled spiced apple jam to the center of the flattened cookie dough.
Add another flattened disk of dough on top and press the edges of the cookie dough's perimeter together to achieve one big cookie. Continue until you finish the dough (you will probably have about half of the spiced apple jam leftover; save it, it’s delicious!)
Bake for 12 minutes or until the top of the cookies are golden brown.
Let the cookies cool completely before handling. Serve with tea, coffee, and/or honey or enjoy them on their own!
