Vegan Pineapple Stir Fry

Vegan, Gluten-Free, Nut-Free

Serves 3-6


Ingredients

  • 2-3 small whole pineapples (depending on serving size)

  • 2 tbsp sesame oil

  • ¼ c low sodium tamari (GF certified)

  • â…“ c pineapple juice

  • 1.5 tbsp agave

  • 2-3 cloves garlic, minced

  • 2 tsp cornstarch

  • 1 16 oz bag of (frozen) Whole Foods Stir Fry Blend

  • ½ c cubed pineapple

  • ¾ c cooked chickpeas

Top it off

  • sesame seeds, red pepper flakes, chopped scallions


Directions

  1. Slice the whole pineapple/s directly in half and hollow out each side to form your bowls. Reserve ⅓ c of pineapple juice and ½ c of cubed pineapple.

  2. Heat the sesame oil, tamari, pineapple juice, agave, and garlic in a pan over medium-high heat for about 2 minutes. Stir in the cornstarch and continue cooking until slightly thickened.

  3. Add the frozen vegetables and cook, stirring often, for about 5 minutes or until the veggies are soft.

  4. Turn the heat to low and add the cubed pineapple and chickpeas for an additional 3 or so minutes until the sauce further thickens and fully coats all of the stir fry’s components.

  5. Serve the stir fry immediately in the pineapple bowls and optionally top with sesame seeds, red pepper flakes, and/or scallions.
