Vegan S'mores Protein Donuts

You're gonna want s'more of these guys!


This recipe is inspired by Quest Nutrition‘s S'mores Protein Bars (one of my fav flavors of theirs!) The donuts and frosting are completely vegan AND gluten-free, so if you'd like the entire treat to be GF friendly, simply use vegan, gluten-free graham crackers or omit them entirely! The donuts themselves are so good that they're as delicious on their own as they are "s'morsified!"

 

Vegan S'mores Protein Donuts

Vegan, Gluten-Free Optional

Makes ~12 donuts


Ingredients

Donuts

  • 1 .5 c oat flour

  • 37 g (~6 tbsp) chocolate protein powder

  • 2 tbsp cocoa powder

  • 2 tbsp coconut sugar

  • 1/2 tsp baking soda

  • 2 tsp baking powder

  • 3/4 tsp kosher salt

  • 1/3 c unsweetened vanilla almond milk

  • 1/4 c maple syrup

  • 2 flax eggs (2 tbsp flaxseed + 5 tbsp water)*

  • 1/4 c unsweetened applesauce

Frosting

  • 1 can’s worth of aquafaba

  • 1 tsp vanilla extract

  • 1/3 c maple syrup (or vegan vanilla protein powder)

    • if using latter option, exclude the vanilla extract

  • 1/2 tsp lemon juice

  • 1/4 tsp cream of tartar (optional)

Top it off

  • Crushed graham crackers (V and/or GF if desired)


Directions

  1. Preheat oven to 350 °F. Lightly grease 2 donut pans (assuming each makes 6 donuts) and set to the side.

  2. Add the oat flour, chocolate protein powder, cocoa powder, coconut sugar, baking soda, baking powder, and salt to a medium sized bowl and whisk until combined.

  3. In a separate bowl, whisk together the rest of the donut ingredients. Add the wet to dry ingredients and fold together with a spatula or wooden spoon until you achieve a rather thick, muffin-like batter.

  4. Transfer the batter to a piping bag and distribute it evenly across the pans to form 12 donuts.

  5. Bake for 12 minutes or until a toothpick comes out clean from the center of one of the donuts. Let cool completely before frosting.

  6. To make the frosting, whip together the aquafaba, vanilla, maple syrup or vanilla protein powder, and lemon juice in a stand mixer over medium-high speed. Sprinkle in the cream of tartar while whisking to prevent any clumps from forming. Continue whisking until thick and fluffy (10-15 minutes).

  7. Pipe a circle of frosting along the top of the donuts. Optionally use a blow torch to lightly toast the frosting. Generously top with crushed graham crackers and enjoy!


Notes

*To make the flax eggs, combine the ground flax and water and allow to sit for five minutes or until homogenous and similar to the texture of egg whites.
